Saffron began directing and writing with Moving Parts Theatre Company, while touring to schools, colleges and community venues across the country. She then went on to spend two years at the Wolsey Theatre, Ipswich on the Thames Television Regional Theatre Young Director Scheme.

She has worked as a Director/Literary Manager with numerous companies including: Hampstead Theatre; Paines Plough; Graeae; Old Red Lion; Soho Poly Theatre; Theatre Royal Stratford East; Red Ladder; No Boundaries; Regent’s Park Open Air Theatre; Wolsey Theatre, Ipswich; The Drum, Plymouth Theatre Royal; Babel Theatre Company (Pin Money Opera at Battersea Arts Centre – Best New Music Theatre Award). She has organised writers workshops, music & drama projects, rehearsed readings and festivals of new writing nationally for various companies including: Hampstead Theatre; Polka Theatre; Masquerade Theatre School; Hampton Theatre School; Major Road; Red Ladder; Leap; Swiss Cottage Festival Group; Paines Plough; The Albany Empire; The Young Vic; Tron Theatre, Glasgow; The Tricycle Theatre; Rose Bruford College; Camden School for Girls, Wolsey Theatre, Ipswich; Plymouth Theatre Royal; Half Moon Theatre; Women In Entertainment; SHAPE; ILEA and Eastern Arts and many individual workshops in schools, colleges and prisons.

She has also been a reader for Channel 4 New Plays and the Verity Bargate Award and has worked with a number of high profile writers: April de Angelis, Catherine Johnson, Hattie Naylor, Tunde Ikoli, Dave Cohen, Simon Mendes da Costa and Rona Munro.
